Bullet-proof releases are standard in the industry and gives the producer the rights to use the footage in perpetuity, to be distributed in any eventual format accross the known universe (no kidding, that's what they actually say!)
Of course the really tough part is making the interview subjects feel at ease to get the reactions and quotes you want without actually telling them what to say and do word for word... but then again, that's the trick to doing ANY interview (and to directing kids and animals too!)
And in all cases, star by getting a good lawyer used to dealing in things of the sorts, whether or not you're doing something for which you think you might get sued...
